Warm Muffins


Although I have some baking in the freezer, leftover from Christmas, I also had a few "vintage" bananas that needed to be turned into something! Pondside posted a link to a wonderful muffin recipe with bananas, carrots and other bits of deliciousness.

Almost everything was on hand. 

A few dried apricots stood in for my shortage of dates; almonds played the role of pecans. These "Sunshine Muffins" are hearty, cinnamon, ginger delights.






A hot cup of tea and a warm muffin: there's a fine "pick-me-up" in the afternoon.

Thank goodness for those overripe bananas!

    We cut and freeze overripe bananas so that we can use them in baking or smoothies anytime.

  9. You are my hero! Anyone that can turn a vegetable into a yummy treat deserves a MEDAL OF HONOR! This is how I would like to eat my carrots that is for sure. You are the sunshine!
